Celebrate Gratitude

Let’s celebrate gratitude.  It’s Thankful Thursday!  Here’s what I’m thankful for this week:

Tea with friends.

I’ve been pretty anti-social the last little while, so it was really just what I needed to be invited for visits and tea with 2 different friends.  I also greatly appreciate that they did not bat an eye when I showed up with a small cooler full of snacks to keep my belly happy every hour or so. 🙂

Little bits of extraordinary.

It’s always fun when something amazing happens during an ordinary boring chore.  Like when your colander becomes a laser while putting away the dishes.  Saweet!



Laksa is a noodle soup that I order from a local Vietnamese restaurant and it rocks my socks!  It is a curry coconut broth, super skinny rice noodles, chicken, prawns, and various veggies.  There is something magical about the spices in this soup and when then mingle in my belly it creates great happiness.


Farmers Market.  

On Sunday we decided to head to Sunpeaks for a little adventure and check out their farmer’s market.  I was pleasantly surprised to find these soup mixes for sale there.  My dad usually buys them at our local farmer’s market for me and they are just the easiest busy day supper ever.  They are also always super tasty.  I bought 3 new flavors to try.


Multi-purpose laundry baskets.

Really if I could fit in a laundry basket I would probably read there too.  OK maybe I wouldn’t, but I do love catching my kids indulging in their favorite books.  Especially if it is someplace weird.


Veggie delivery.

Last week was our first veggie delivery.  Yes! local food delivered right to our rural door.  I had a bit of a learning curve to deal with, but I managed to make a bunch of successful meals that included unusual things like garlic scape.  I would have to say our biggest success was the pickled radishes.  My kiddos would have eaten the whole jar in one day if I had let them.  Nom nom nom.

    Thankfulness is always a good thing so thank you for posting. I am thankful for many things today, among them is God’s provision, and two beautiful daughters and my wife. We have been blessed by a bountiful garden, as we are blanching and freezing fresh broccoli, eating fresh green beans, cucumbers, and zucchini, I am thankful that we can give to our friends and neighbors out of the bounty instead of the extra going to waste.

    Pickled radishes? I may have to plant radishes next year… how did you pickle them?
